You really have to mark your spot when you finally find them and be able to tell the difference between the edible Fiddle Heads and the scary fiddle heads. They taste to me like a combination of spinach and asparagus with an earthiness to it. They could be ready starting next weekend and of course depending on the weather anytime within the next four weeks. It is a labour of love and culunary delight. If the picking is still good Jeff when you and Lindsay come this way then I will be happy to take you both to my Fiddle Head spot and show you what to look for and help you get a good load to take back to Calgary.
