Peanut chicken soup
I love soup . . . of all kinds so I am always looking for new funky recipes. allrecipes.com is my favourite site for finding just about anything that I want with the ingredients that I have at hand or even something a little more adventerous . . . like peanut chicken soup. I made a few adjustments. I used my leftover turkey breast from last Christmas and homemade turkey stock from the same event (instead of chicken and chicken broth), I didn’t use potatoes because I am potato-ed out now (I grew way too many potatoes this year and we often have potatoes some how with our meal . . enough already . . . I done with the potatoes!). About five minutes before I was about to serve the soup I added enough Oriental style egg noodles to the soup along with the parsley. It worked out just lovely. How I would tweak this recipe is add a little something hot like a wee bit of smokey chipotle powder or even just chili peppers, chunky peanut butter rather than smooth for texture and also fresh cilantro rather than fresh parsley. A nice garnish would be some chopped peanuts on top. I did serve this with a fresh baked baguette but I think I would have preferred it with an Oriental rice paper wrap with crunchy veggies.
